Project 52, Week 6
I know, I skipped over week 4 and 5. But I’ll come back to them. Week 6 was too fun not to share right away.
Our normal Saturday mornings don’t always consist of pancakes, but when they do they always include chocolate chips. Now, I wish I could take credit for these good lookin’ pancakes, but I can’t. My Hubby, guys. I’ve discovered that he’s the best pancake maker. And get this… he made them from scratch. Insert all the heart eyes for this proud wifey moment.
But for reals, friends. Did you know that making pancakes from scratch is the easiest thing! We use a recipe that I found from AllRecipes (check it out at the end of the post).
1 1/2 cups flour
3 1/2 tsp baking powder
1 tsp salt
1 tbsp sugar
1 1/4 cups milk
1 egg
3 tbsp butter, melted
A splash (or two) of vanilla extract
Optional additions: cinnamon, chocolate chips, blueberries, applesauce
A note about the baking powder… adding that much baking powder makes these pancakes pretty fluffy. I tend to like mine just a little less thick, so we added a smidge less baking powder. Also, because these are so thick, definitely cook them at a lower temp so that they cook all the way through without burning!
