F A L L has arrived. And it brought cooler temps, scarves and boots, apple picking, and these apple oatmeal chocolate chip cookies. Can I just say… they were delish. I mean, I made them this morning and I’m pretty sure they’ll be gone before the end of the night.
Last weekend we went apple picking with our sweet friends and their little babes. It was a blast to say the least. Their biggest is old enough to understand the concept of apple picking now and he thoroughly enjoyed every second.
If you remember, last year we picked more than 60 lbs. of apples – that’s basically what happens when 4 people take a bag and just pick to their hearts content. It’s a really good thing that apples can be peeled and frozen. This year, we only picked about 20 pounds, enough for a round of applesauce, 4 pies, and some for eatin’.
This recipe was super quick (I cranked out about 2 dozen cookies before I had to get ready for work). Bonus: they made a great breakfast.
You can take any basic oatmeal cookie recipe and add chocolate chips and coarsely chopped apples! Or follow the recipe that I used over at Joythebaker.com
Note: Mine did not turn out flat like hers… and I’m not even mad about it. And the cookies I photographed had quite a few more apples in them than the rest because I practiced #noappleleftbehind. I omitted the walnuts and added the chocolate chips per a recommendation from my cousin.
